Ingredients
For Puri
- Suji (semolina) – 1 cup
- Maida – 2 tbsp
- Salt – a pinch
- Water – as needed
- Oil – for deep frying
For Pani ( Spicy Water )
- Mint leaves – ½ cup
- Coriander leaves – ½ cup
- Green chillies – 2
- Tamarind pulp – 2 tbsp
- Black salt – ½ tsp
- Roasted cumin powder – 1 tsp
- Chaat masala – 1 tsp
- Regular salt – to taste
- Water – 3–4 cups
- Lemon juice – 1 tbsp
- Ice cubes – optional
For Stuffing
Boiled potatoes – 2 (mashed)
Boiled chickpeas/white peas – ½ cup
Salt, chaat masala – to taste
Onion – finely chopped (optional)
Instructions
For Puri
- Mix suji, maida, and salt in a bowl.
- Add little water and knead into a stiff dough.
- Rest for 20 mins.
- Roll small puris and deep fry till crisp & puffed.
- Let them cool and store in airtight box.
For Pani ( Spicy Water )
- Blend mint, coriander, green chillies, tamarind, and lemon juice.
- Add spices: black salt, chaat masala, cumin powder, salt.
- Mix with 3–4 cups cold water.
- Strain and chill — spicy pani ready!
For Stuffing
- Mix boiled potato + chickpeas + chaat masala + salt.
