Pani Puri

Ingredients

For Puri

  • Suji (semolina) – 1 cup
  • Maida – 2 tbsp
  • Salt – a pinch
  • Water – as needed
  •  Oil – for deep frying

For Pani ( Spicy Water )

  • Mint leaves – ½ cup
  • Coriander leaves – ½ cup
  • Green chillies – 2
  • Tamarind pulp – 2 tbsp
  • Black salt – ½ tsp
  • Roasted cumin powder – 1 tsp
  • Chaat masala – 1 tsp
  • Regular salt – to taste
  • Water – 3–4 cups
  • Lemon juice – 1 tbsp
  • Ice cubes – optional

For Stuffing

Boiled potatoes – 2 (mashed)

Boiled chickpeas/white peas – ½ cup

Salt, chaat masala – to taste

Onion – finely chopped (optional)

Instructions

For Puri

  1. Mix suji, maida, and salt in a bowl.
  2. Add little water and knead into a stiff dough.
  3. Rest for 20 mins.
  4. Roll small puris and deep fry till crisp & puffed.
  5.  Let them cool and store in airtight box.

For Pani ( Spicy Water )

  1. Blend mint, coriander, green chillies, tamarind, and lemon juice.
  2. Add spices: black salt, chaat masala, cumin powder, salt.
  3. Mix with 3–4 cups cold water.
  4.  Strain and chill — spicy pani ready!

For Stuffing

  1. Mix boiled potato + chickpeas + chaat masala + salt.

2. Add onion (optional).
