Ingredients
- Oil – 3 tbsp
- Cumin seeds – 1 tsp
- Hing – 1 pinch
- Ginger-Garlic paste – 1 tbsp
- Onion – 2 medium (finely chopped)
- Tomato – 2 medium (pureed or finely chopped)
- Green chilli – 1 (chopped)
- Turmeric powder – ½ tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1.5 tsp
- Garam Masala – 1 tsp (Sarv Shresht Garam Masala )
- Salt – to taste
- Fresh cream – 2 tbsp (optional)
- Water – as required
- Mixed Vegetables (boiled or semi-cooked):
- Carrot – ½ cup
- Beans – ½ cup
- Cauliflower – ½ cup
- Peas – ¼ cup
- Potato – 1 medium (diced)
Step by Step (Dhaba Style)

Heat oil in a pan, add cumin seeds & hing.

Add ginger-garlic paste, sauté till raw smell goes.

Add onions and cook till golden brown.

Add tomatoes & green chilli, cook till oil separates.

Add turmeric, red chilli, coriander powder & salt – roast well.

Add boiled vegetables, mix properly with masala.

Pour little water, cover & cook for 5 mins.

Add fresh cream (optional) and garam masala, mix well.

Simmer for 2–3 mins till masala coats veggies nicely.

Serve hot with roti, naan or jeera rice.
